Essential oils are generally extracted by steam distillation. Other processes include expression, or solvent extraction. They are used in perfumes, cosmetics, soaps and other products, for flavoring food and drink, and for adding scents to incense and household cleaning products.
An oil is "essential" in the sense that it carries a distinctive scent, or essence, of the plant. Generally the characteristic flavour of a spice is contributed by its essential oil components. Usually the essential oil constituents of spices can be isolated via steam distillation. Oleoresins are used mainly as a flavouring agent in the food processing industry. They are more economical to use, easier to control for quality and cleaner than the equivalent ground spices. Oleoresins are more stable when heated. The main product in a spice oleoresin plant is oleoresins of chilli, pepper, ginger and turmeric. The co-products are the corresponding spice oils, which are widely used in food and pharmaceutical industries. Oleoresins are the true essence of spices representing their holistic character in terms of flavour, colour and taste attributes.

Natural food colours find their use in food for enhancing the appearance and the appeal of processed food preparations. All natural food colours are subjected to approval as per global standards for safety of Food, Cosmetic and Drug authorities across continents. Food is first served to the eyes, before it can work its magic on the palate. This makes colours an essential part of food preparation. With increasing awareness on the harmful effects of synthetic substances, the demand for nature-based colours is on the rise. We recognises the need for natural colours and has developed healthier alternative to synthetic colours.
